
The knife handle is made from "Pakkawood" which is a composite material of real wood and resins.
The handles are 'stabilised' at pressure using the resin to bind and protect the wood.
The end product is a extremely strong and resilient material whilst having the natural appearance and beauty of wood.
The handles will resist water, oils, detergents and just about anything else you can find in the kitchen.
Although fully water resistant, as with most other high-end kitchen knives, we recommend for best care to wash all Odachi knives by hand.
The core of the knife is clad in alternating layers of 410 and 304 stainless steel. These are then folded over and over in the forging process to make the beautiful pattern you see in each and every Odachi Knife.
This process creates a unique pattern to each blade, no two knives are the same.
The knives are then chemically treated, both to enhance the pattern and to protect against rust.
The core of each knife is made from 10Cr15CoMoV which we add:
Chromium (15.50%): This gives the steel it's 'stainless' quality whilst also making it harder and tougher.
Carbon (1.05%): For edge retention and resistance to wear.
Cobalt (1.50%): This gives the knife strength and adds resistance to rusting.
Molybdenum (1.20%): This gives the steel additional edge retention.
Manganese (0.5%): Trace amounts of Manganese helps with hardness whilst not making the steel too brittle.
Vanadium (0.30%): Vanadium give the steel extreme toughness and wear resistance whilst also helping to prevent corrosion.
The blade is then hardened to around 59HRC to give you and extremely sharp blade that lasts, cut after cut!
Once the knife is fully finished and quality checked, we sign off each knife proudly with an embossing on the knife logo.
As well as a nod to our heritage, the embossed logo on each knife gives you the reassurance that your Odachi knife has met our extensive and demanding quality standards.
